Step 1
Gather and prepare the pie ingredients:
For now:
1 cup of sugar
3 tablespoons of cornstarch
1 cup of milk
3 beaten egg yolks
1/4 cup of butter or margarine
1 tablespoon of finely shredded lemon peel
1/4 cup of lemon juice
For later:
8 ounces of sour cream
2 cups of fresh blueberries
9-inch baked pie shell
For much later:
sweetened whipped cream
fresh lemon slices -
Step 2
Mix the sugar and cornstarch in a saucepan.

Mix in the milk, egg yolks, butter and lemon peel.

Cook over medium heat, stirring constantly. Continue cooking and stirring until the mixture thickens and bubbles.

Once the mixture begins to bubble, cook an additional 2 minutes.

Remove from the heat, and stir in the lemon juice.

Place the contents in a bowl, cover it and place in the refrigerator to cool. Use a stainless steel bowl so the heat doesn't break the glass.

When the mixture is cool, stir in the sour cream and blueberries.

Pour the mixture into the baked pie shell and chill.

When ready to serve the pie, top with sweetened whipped cream. Then garnish it with fresh lemon slices.
