How to Make an Apple Cream Coffee Cake

Try this simple recipe for a fabulous moist coffee cake!

Things You'll Need:

  • For topping and over the apple middle layer you will need the following:
  • 2 tsp cinnamon
  • 1/2 cup granulated sugar
  • 1/2 chopped walnuts, optional
  • For Batter:
  • 1/2 cup (1 stick) softened butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sour cream
  • 1 large apple, peeled and thinly sliced. Use Macintosh or other baking apple. For moister cake, try 2 medium apples.
  • 9" tube pan, lightly greased and floured.
  1. Step 1

    Mix the cinnamon, 1/2 cup sugar and walnuts together in small bowl and set aside.

  2. Step 2

    In larger mixing bowl, beat the butter until creamy. Gradually, add 1 cup sugar and beat until light and fluffy. Add eggs, one at a time, then vanilla. Beat until blended.

  3. Step 3

    Sift remaining dry ingredients, the flour, baking powder & soda, and salt, together in separate bowl. Gradually add the dry ingredient mix to the batter, alternating with the sour cream, on low speed, until ingredients are completely blended.

  4. Step 4

    Take the greased tube pan and spread 1/2 of the batter into pan. Top with the thinly sliced apples spread evenly. Sprinkle 2/3 of the walnut mixture over apples, then add remaining batter making sure to cover the apples completely. Sprinkle remaining walnut mixture over top.

  5. Step 5

    Bake approximately 40 minutes at 375 or until toothpick or knife inserted in middle of cake is clean.

Tips & Warnings
  • For a lighter version, try light or fat free sour cream.
