How to Make Apple Cabbage Soup

In the fall, the stores are inundated with apples. Why not put them to good use to make a nice, healthy soup for a chilly fall night? This Apple and Cabbage Soup is a very tasty soup, and is also quite healthy and filling. So fill your bowls and enjoy. Does this Spark an idea?

Things You'll Need

  • 1 soup or stock pot
  • 1 tbsp. olive oil
  • Wooden cooking spoon
  • Knife
  • 1 onion
  • Vegetable peeler
  • 3 carrots
  • 3 cups vegetable stock
  • 1 cup water
  • 2 cups apple cider
  • 1/4 cup brown sugar
  • 3 cinnamon sticks
  • 3 apples (any variety)
  • 1/2 tsp. ground nutmeg
  • 1/2 head cabbage
  • 1/2 tsp. pepper

Instructions

      Place stock pot on stove over medium heat. Add oil. Chop onion into small pieces. Add to oil and cook for about five minutes, stirring frequently. Cut carrots into small pieces, also add to oil, and cook an additional five minutes.

      Add vegetable stock, apple cider, water, brown sugar and cinnamon sticks and turn heat up to medium high. Meanwhile peel and chop apples into pieces small enough to fit on a spoon.

      Once liquid comes to boil, add apples. Sprinkle liquid with nutmeg and pepper and stir. Chop cabbage into small pieces, and add that to liquid. Bring liquid back to boil once again.

      Once liquid boils, lower to a simmer. Simmer for 15 to 20 minutes, or until apples are tender. Spoon out into bowls and serve.

Tips & Warnings

  • You can always add more apples or apple cider to increase apple flavor. If you do not like sweet, replace brown sugar with an extra two sticks of cinnamon.
