  • 1 cup of cooked rice
  • 3/4 cup of seedless golden raisins (optional)
  • 13 ounces of evaporated milk
  • 1/4 cup of water
  • 2 eggs
  • 1/3 cup of sugar
  • 1/8 teaspoon of salt
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of vanilla

      Mix the cooked rice and raisins together in a 1-quart casserole dish. Set it aside for later use. If you don't fancy raisins, you can omit them.

      Mix all of the remaining ingredients in a mixing bowl. Beat until the mixture is smooth.

      Pour the mixture over the rice and raisins.

      Place the casserole dish into a pan of hot water. Place in the oven.
