How to make quick carrot halvah, a Divali treat

Indian holiday sweets usually scare me off: They often deep fried and seem to be 110% sugar. But I had one great treat over the past Divali holiday that was not only delicious but also healthy. This version of carrot halvah, made mainly from sesame seeds and carrots, is simple to make and requires no cooking. It's much better than any energy bar.

Instructions

Things You'll Need:

  • 1/4 cup tahini or sesame butter
  • 1/4 cup honey
  • 3/4 cup grated carrots
  • 1/4 cup shredded coconut
  • dash of cardamom or nutmeg
  • walnut pieces
  1. Step 1

    Mix tahini or sesame butter and honey in a bowl. Blend well.

  2. Step 2

    Add in carrot and coconut. if you have a blender, you can puree these two ingredients together first, before adding them to the sesame butter and honey mixture.

  3. Step 3

    Add in cardamom and/or nutmeg. The mixture should be fairly stiff. Knead it with your hands to form a ball.

  4. Step 4

    Pull the mixture apart into 3 or 4 pieces. Roll each of them out into a roll about an inch thick. Press the walnut pieces into the rolls.

  5. Step 5

    Wrap the rolls in wax paper and refrigerate until you want to eat them. Cut the rolls into bitesize pieces to serve.
