Things You'll Need

  • 1 cup peanut butter
  • 2 teaspoons tapioca flour
  • 1/2 bag gluten- and corn-free chocolate chips, such as the Enjoy Life brand
  • 1/4 cup milk
  • Medium saucepan

Instructions

    • 1

      Stir the peanut butter and milk together in the saucepan on low heat until they are well-mixed. The mixture will become thinner.

      Mix the tapioca flour into a cup with a little milk. When smooth, pour into the saucepan and stir into the peanut butter mixture.

      Pour in the chocolate chips and stir until melted. If it's too thick, add a little milk, and if it's too thin, add more tapioca flour. Remove the frosting from the heat and spread over cake, cupcakes or other desserts.

Tips & Warnings

  • If you're not gluten free and corn free, you can just use corn starch in place of the tapioca flour.

  • The frosting thickens as it cools.

  • Be sure to cook on a low temperature.
