Things You'll Need:
- ½ head iceberg lettuce, bite-size pieces
- 1 green pepper, diced
- 1 cucumber, diced
- 1 medium onion, chopped
- ½ cup shredded mozzarella, provolone, or parmesan cheese (your choice)
- ½ cup black olives
- ½ cup garbanzo beans
- 2 small tomatoes, sliced
- ½ cup extra light olive oil
- ¼ cup wine vinegar
- 1 tbsp. garlic powder
- 1 tbsp. parsley flakes
- 1 tbsp. oregano
- ½ croutons, optional
- salt and pepper

Step 1
To prepare lettuce, remove core. Tear and place bite-sized pieces of the lettuce into a colander (do not use knife, lettuce will wilt), rinse with ice water (will help to retain the crisp texture).

Once the lettuce is rinse thoroughly, place the bite-size pieces in a large bowl.
Add diced green pepper, diced cucumber, chopped onion, shredded mozzarella cheese, black olives, garbanzo beans, and sliced tomatoes. -
Step 3
Now you are ready to season and dress the salad. Add the olive oil, vinegar, garlic powder, parsley flakes, oregano, salt and pepper.
Chill prepared salad. Before serving, toss salad so that all the flavor is saturated throughout.
