How to Make Slow Cooker Beef Stroganoff

This is a delicious beef stroganoff recipe that you can start hours ahead of time. When you want a really special meal that is hassle-free, try this special slow cooker beef stroganoff.

Instructions

Things You'll Need:

  • slow cooker
  • 2-1/2 pounds of sirloin tips or other lean beef.
  • one can condensed mushroom soup (low fat is fine)
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 pound fresh mushrooms, sliced
  • 1/3 cup plain yogurt -- either whole milk or low fat
  1. Step 1

    Trim visible fat off the beef. Then slice the beef into strips of medium thickness and place in the bottom of the slow cooker. Add the mushroom soup, 1/2 teaspoon onion powder, and 1/4 teaspoon each of garlic powder and pepper.

  2. Step 2

    Cover the slow cooker and cook on low for about 5-1/2 or 6 hours, until beef is almost tender. Then add 1/2 pound fresh mushrooms, washed and thickly sliced.

  3. Step 3

    Cover the slow cooker and cook an additional 45 to 60 minutes. (Total cooking time should be about 6 to 7 hours.) When meat is tender, turn off heat and add 1/3 cup of plain yogurt. (Sour cream may be substituted if you prefer.) Mix the yogurt into the sauce until smooth. Serve the slow cooker beef stroganoff with noodles, rice, or mashed potatoes. Serves about 5 or 6.
