It's easy to make hummus from scratch.

Hummus, an Arab food dip or spread, is made from cooked, mashed chickpeas with other flavorings. With a food processor, you can zip hummus together in no time flat. It is delicious, nutritious and costs less than half as much as store-bought hummus. Even a small food processor of good quality will work to make hummus in a flash. Adjust seasoning to taste.   • 1/2 cup water
  • 1/4 cup tahini
  • 1/3 cup bottled lemon juice
  • 2 cans garbanzo beans (chickpeas), drained
  • 3/4 tsp. ground cumin
  • Pinch of cayenne pepper
  • 2 tsp. minced garlic from a jar
  • 1/2 tsp. salt
  • 1 tbsp. extra virgin olive oil
  • Sprig of parsley or cilantro for garnish

Instructions

      Rinse the chickpeas; drain them in a colander. Let them sit while you measure out the other ingredients into the food processor.

      Dump water, tahini, lemon juice, cumin, cayenne pepper, salt and minced garlic in the food processor. Pulse the hummus ingredients five or six times to mix well.

      Add the drained garbanzo beans into the work bowl. Process for one minute. Stop, and scrape down the work bowl with a spatula. Process again for one minute.

      Scoop the hummus into a bowl. Dress the top of the dip by pouring a tablespoon of extra virgin olive oil on it. Add a sprig of green parsley or cilantro as a garnish.

Tips & Warnings

  • The water in this easy hummus recipe makes it creamier than usual.

  • Tahini is sesame paste. It can usually be found with the peanut butter or in the health food aisle of the grocery store. If not, find tahini on the internet. One jar of it will last you a long, long time, as each batch of hummus only takes 1/4 cup of tahini.

  • Adjust the cumin, garlic and cayenne pepper to taste.

  • Stir in the separated oil in the tahini before using it. Keep refrigerated.

  • Cayenne pepper is incredibly hot. Put in only a pinch at a time, then taste your hummus before adding more. Wash your hands well if you touch it. Don't rub your eyes with hands that have touched cayenne pepper.
