Things You'll Need:
- 3 cups sifted cake flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoons salt
- 1 3/4 cups sugar
- 2/3 cup butter or margarine
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1 1/4 cups milk
- Whipping cream
- Whatever kinds of fruit that you have in your kitchen or fridge will do - canned peaches, fresh strawberries, bananas, raspberries or frozen blue berries.
-
Step 1
Preheat oven to 350°F. Grease bottom of a round cake pan
-
Step 2
In a bowl, sift together flour, baking powder and salt; set aside. In another bowl, cream sugar and butter together until light. Add eggs and vanilla to creamed mixture and beat until thoroughly mixed. Add flour mixture to creamed mixture alternately with milk, beating well after each addition. Continue beating one minute.
-
Step 3
Spread batter evenly in prepared pan. Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean. Remove from pan and cool completely.
-
Step 4
After cake is cooled, cut cake horizontally into 2 or 3 even layers. Place bottom layer (baked side down) on presentation plate. Spoon milk (or juice from canned fruit) onto each cake layer to lightly moisten. Place desired fruit directly on bottom cake layer. Whip whipping cream and save half of the cream for the top layer. Spread cream on bottom layer (over the fruit). Add top cake layer (baked side up) and spread the other half of saved cream over the top and sides of the cake. Decorate top and sides of cake with desired fruit. Let rest 30-60 minutes before serving. Store in refrigerator
