How to Cure a Tagine

A tagine is a piece of cookware of North African origin, similar to a Dutch oven. It has two parts: a base for meat and vegetables, and a cover that catches moisture, creating stews with tender meat. Tagines are traditionally made of clay, although modern tagines can also be made of cast iron or silicone. If you buy a traditional clay tagine, you'll have to cure it before you use it for cooking.

Things You'll Need:

  1. Step 1

    Soak the tagine in water for at least one hour. It's best to put the tagine fully underwater. If you can't fit the entire tagine in your sink or tub, fill the tagine base and lid with water.

  2. Step 2

    Rub olive oil into the inside of the tagine base and lid. You only need to use a few tablespoons of oil. The surface should be shiny, but there shouldn't be inches of olive oil pooling at the bottom.

  3. Step 3

    Place the tagine in a cold oven.

  4. Step 4

    Set the oven temperature to 350º F.

  5. Step 5

    Leave the tagine in the oven for one-and-a-half to two hours.

  6. Step 6

    Wash your tagine with warm water and dishwashing soap (clay tagines are not dishwasher safe). It's now ready to use.
