How to Cook Toad in the Hole

Toad in the Hole is a classic British dish made by baking sausages in a bed of Yorkshire pudding. Make the Yorkshire pudding batter at least an hour ahead of time. Serve the dish with steamed vegetables, mashed potatoes and gravy for a hearty meal. Any kind of sausages will work, but for the most authentic Toad in the Hole, look for English-style sausages, which are sometimes labeled as "Bangers."

Instructions

Things You'll Need:

  • 1 cup flour
  • ½ tsp salt
  • 2 eggs
  • ½ cup milk
  • ½ cup cold water
  • British-style sausages or other meaty sausages
  • Whisk
  • Mixing bowl
  • Roasting pan

    Toad in the Hole

  1. Step 1

    Put the flour into a large mixing bowl and add the salt. Make a well at the bottom of the flour, crack the two eggs into the bottom and whisk a little to break the yolks up.

  2. Step 2

    Add the milk and cold water and whisk until all the flour is incorporated into the liquid. It should be thinner than pancake batter---add more water if necessary to achieve the consistency of heavy cream. Allow this to rest for at least an hour.

  3. Step 3

    Preheat the oven to 425 F. Prick the skins of the sausages with a sharp knife several times and place them in the roasting dish. If you are using lean Italian sausages or breakfast sausages add a few tablespoons of vegetable oil to the pan. Cook them in the oven for 10 minutes, rotate them and bake for another 10 minutes.

  4. Step 4

    Remove the hot pan from the oven and immediately pour in the Yorkshire pudding batter so that it surrounds all the sausages. Put it back in the oven.

  5. Step 5

    Bake the Toad in the Hole for 25 to 35 minutes, or until risen and golden brown.

Tips & Warnings
  • Try not to open the oven door while the Toad in the Hole is cooking.
