How to Make Pecan Candy in the Microwave

Microwave candy recipes are a time saver when the long process of mixing, baking and cooling is not an option. It is also convenient for times when the oven is being used to bake the holiday meal and no room is left for baking. Pecan candy can be made easily in the microwave with a few simple ingredients. Use whatever color confectionery coating you would like for dipping for a distinctive look. Does this Spark an idea?

Things You'll Need

  • 3/4 cup butter, softened
  • 1 box powdered sugar, sifted, or more optional
  • 1 can sweetened condensed milk
  • 2 cups chopped pecans, lightly toasted and cooled
  • 2 cups shredded coconut
  • 1/2 cup candied red cherries, chopped
  • 1/4 tsp. cinnamon powder (optional)
  • 1-1/2 tsp. pure vanilla extract
  • About 2 cups dark chocolate confectionery coating, chopped
  • About 1/2 cup white chocolate confectionery coating or white almond bark, for drizzling
  • Cookie sheets or flat baking pans lined with wax paper or chocolate dipping sheets

Instructions

      Melt the butter in a microwave-safe dish. Remove from the microwave and mix the melted butter with the sifted confectioner's sugar, sweetened condensed milk, pecans, coconut, red candied cherries, cinnamon (if using) and vanilla extract. Mix the ingredients well. If a firmer candy is desired, add in up to 1/2 cup more powdered sugar.

      Place the mixture in the freezer or the coldest part of the refrigerator until it's firm enough to handle well.

      Take the candy out of the freezer or refrigerator and, with a teaspoon, grab up serving-size pieces of candy and form into even mounds. Alternately, use a small round cookie scoop or melon baller to create even balls quickly.

      Place the balls on top of the lined cookie sheets. Repeat for the remaining candy. Place back into the refrigerator until cold and firm.

      Melt the confectionery coating in the microwave, beginning with a minute and then stirring well after. Repeat heating and stirring in 15-second intervals to make the coating smooth and prevent overheating.

      Dip the balls into the chocolate confectionery coating using dipping forks and place back on the baking sheet. Melt an additional color of confectionery coating and drizzle on the top for decoration. Serve as soon as the chocolate sets up.
