How to Bake Oh-So- Yummy Pumpkin Bars, Fluffy, Moist Pumpkin Bars

If you are a pumpkin affecinado and love all things pumpkin---pumpkin pie, pumpkin pancakes, pumpkin lattes and pumpkin candles---be sure to include baking and eating these delicious pumpkin bars as part of your favorite autumn tradition. The spicy aroma of the bars will waft through your home, sending your taste buds salivating.

Instructions
  1. Step 1

    Grease (or use vegetable spray) and flour a 15x10x1 pan. Preheat oven to 350 degrees.

    Combine in a large mixing bowl the following dry ingredients that will be mixed on an electric mixer:

    2 cups all-purpose flour
    1 ½ cups firmly packed brown sugar
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon cinnamon
    ½ teaspoon nutmeg
    ½ teaspoon ground cloves
    ¼ teaspoon salt

  2. Step 2

    Stir these dry ingredients together with a mixing spoon so that it will be easier to combine them with the moist ingredients.

    Then add the following ingredients to the above:

    ½ cup oil
    ½ cup apple juice
    1 can (15 ounces) pumpkin pie filling (or 2 cups from a large can)
    2 eggs
    3 tablespoons of milk (for fluffiness---yes. The milk does make the bars fluffy)

  3. Step 3

    Beat with electric mixer on low speed until ingredients are moistened. Then beat on medium speed for 2 minutes. Pour into pan and place in preheated 350 degree oven. for about 30 minutes. Baking times may vary by oven. Bars are done when toothpick inserted into center comes out clean. Let cool for about 1 hour so that bars are easier to cut. Bon appetite!
