It can sometimes be difficult to find affordable good tasting gluten free cookies for children or guests who eat gluten free. These gluten free cookies are a perfect treat for kids on a gluten free diet or for your friends who eat gluten free. Serve them with a tall glass of milk or a cup of your favorite coffee. For a friend on a gluten free diet, package these in a pretty box along with some of their favorite coffee for a sweet surprise!

Instructions

Things You'll Need:

  • 1/2 cup butter, softened
  • 1/2 cup molasses
  • 1/2 cup dark brown sugar
  • 1 large egg
  • 2 1/2 cups rice flour
  • 1/4 teaspoon xantham gum
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 1-2 tablespoons sugar
  1. Step 1

    Preheat oven to 375 degrees. Cream together butter, molasses, and brown sugar in a mixing bowl. Add egg and beat to combine.

  2. Step 2

    In a separate bowl, mix together rice flour, xantham gum, ginger, baking soda, salt, cinnamon, cloves, and nutmeg. Beat to combine.

  3. Step 3

    Shape dough into 1 1/2 inch balls, roll in sugar, and place 2 inches apart on a lightly greased baking sheet. Bake about 8-10 minutes until set.

  4. Step 4

    Cool cookies 1 minute on the baking sheet and then transfer to a wire rack to cool completely.

Tips & Warnings
  • These cookies are pretty sweet, so if you don't like as much sugar, just cut down on the amount of brown sugar or skip rolling them in sugar before baking.
  • If cookie dough starts to get too sticky, place in the refrigerator for a few minutes.
