Things You'll Need:
- 2 cups of long grain brown rice
- salt to taste
- 1 can of Bushes seasoned black beans
- 1/2 cup of chopped onion
- 1/2 cup of scallions (green onion)
- 1/2 cup of chopped green pepper
- 1 cup of chopped tomato
- 1 tsp of garlic powder
- 4 tblsp of cider vinegar
- 1 tsp of Trappey's hot sauce

Step 1
Cook brown rice according to package instructions. I normally do 3 cups of water for 2 cups of rice. Bring the water to boil, sprinkle in some salt to taste. Once the water is boiling, pour in rice, turn down to medium heat and cover until rice is tender and all of water is almost gone. This will yield perfect rice every time.

While rice is cooking, drain black beans and set the juice to the side. Place on medium heat and add in onion, scallions, green pepper, tomato and garlic powder.

Once the beans are heated through and the juices from your fresh ingredients have begun to appear in the pan, turn down to low heat until rice is done.

When rice is done, pour in beans, reserved juice, vinegar and hot sauce. Keep on low heat to allow flavors to meld (approximately three minutes). Delicious and healthy!

For the die hard healthy eaters, an even healthier alternative to an already healthy dish is instead of using canned black beans, you may use dry beans. With dry beans, you can control the amount of salt and there are no preservatives. Although the preparation and cooking time of dry beans is considerable, it is still an option.
