Butterscotch and apples are a good pairing.
Butterscotch and apples are a good pairing.

Here is a great recipe combining the wholesome sweetness of applesauce and the richness of butterscotch. Butterscotch chips are used in this recipe, but white chocolate chips, dark chocolate chips or other flavored chips or baking candies could easily be substituted.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar
  • 1/2 cup shortening
  • 1 egg
  • 3/4 tsp vanilla
  • 1 cup applesauce
  • 1 6-oz. or 8-oz. bag of butterscotch chips
  1. Step 1

Preheat oven to 375 degrees. Reserve at least two flat baking sheets for making the cookies.

  2. Step 2

Sift the flour with the baking powder, cinnamon, salt, baking soda, ground nutmet and ground cloves into a mixing bowl. Reserve.

  3. Step 3

Cream the shortening in a mixing bowl until light and fluffy. Add in the sugar and mix until well combined. Add in the egg and the vanilla, scraping the bottom well to make sure the bottom has been mixed in and no lumps are remaining.

  4. Step 4

Add in the dry ingredients to the creamed mixture. Stir well. Add in the applesauce and the baking chips. Scrape the bottom well.

  5. Step 5

Drop by large teaspoonfuls onto a baking sheet. Bake in the oven until lightly browned, about 8 to 12 minutes, depending on the size of the cookie. Transfer to a cooling rack and cool before serving.

Tips & Warnings
  • Use any combination of spice if you want a different flavored cookie.
