Old fashioned ranger cookies are a great drop cookie. It is made from shredded coconut, oatmeal and crisped rice cereal. Ranger cookies are a great gift-giving cookie, and they usually don't last too long in the cookie jar.

Instructions

Things You'll Need:

  • 1 cup whole butter
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups quick cooking rolled oats
  • 2 cups crisped rice cereal (Rice Crispies type)
  • 1 cup shredded coconut
  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    In a large mixing bowl, cream the butter, granulated sugar and brown sugar together. Scrape well during the mixing to ensure the sides and bottom are incorporated.

  3. Step 3

    Add in the eggs one at a time, scraping down the sides and bottom with each addition. Add in the vanilla extract.

  4. Step 4

    Mix the all purpose flour, baking powder and salt together. Mix into the creamed mixture, and stir until no lumps remain.

  5. Step 5

    Add in the quick cooking oats, crisped rice cereal and the shredded coconut. Scrape down the sides and bottom to ensure all the batter is mixed well.

  6. Step 6

    Drop by spoonfuls onto a baking sheet and bake in oven for about 10 minutes until the cookies are lightly browned. The baking time will depend on the size of the cookie.

  7. Step 7

    Transfer to a cooling rack and cool. Serve.
