Since I started growing my own sweet potatoes I discovered a southern treat that has replaced the pumpkin pie in my family's holiday meals for good. Southern sweet potato pie might just be the pie that becomes part of your family's holiday tradition as well. But you don't have to go to all the trouble of growing them yourselves. Potatoes from the grocery store are almost as good as home grown for making southern sweet potato pie.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3 medium sweet potatoes
  • 1 teaspoon salt
  • 1 1/2 cups milk
  • 2 large eggs
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 tablespoon melted butter
  • 9 inch prepared pie crust
  1. Step 1

When buying sweet potatoes, select sound firm roots about the size of your fist store in dry unrefrigerated bin kept at 55-65 degrees Fahrenheit. Do not refrigerate because temperatures below 55 degrees Fahrenheit will chill this tropical fruit and give it a hard core and an undesirable taste when cooked.

  2. Step 2

To cook your sweet potatoes, cook in their skins and cut up like you do white potatoes and cover them with water. Allow to boil until the flesh is soft. Allow sweet potatoes to cook then remove their outer skin. Mash sweet potatoes using a hand electric mixer or for best results, puree in food processor.

  3. Step 3

Preheat oven to 425 degrees Fahrenheit. Prepare your crust. (To make crust from scratch, resources use the second crust to make a second pie)

  4. Step 4

Measure out 1 3/4 cups of your pureed sweet potato. Place in large mixing bowl. add the salt, milk, eggs, sugar, cinnamon, nutmeg, ginger and melted butter. Beat with your hand mixer.

  5. Step 5

Pour into pie pan with prepared crust.

  6. Step 6

Bake for 45 to 55 minutes until toothpick inserted into the middle of the filling comes out clean.

  7. Step 7

Serve slightly warm or cold with whipped cream.
