How to Convert a Brinkmann Smoker into a Grill

If you own a Brinkman smoker, don't think you will only be able to smoke meat on it. Converting it into a regular charcoal grill is relatively simple and you will not have to purchase anything extra. Basically, by removing and rearranging some of the existing parts to the smoker, you will soon have a grill ready to use.

        Set your smoker/grill up in an area that is safe and there is no chance of anything catching on fire. Set up a safe zone where children and pets will not be able to knock the grill over and get burned.

        Remove the smoker's lid and all the pans and racks from inside of the grill and set them aside. When grilling you will not use all the parts you would if you were smoking something.

        Place the drip pan or ash guard in the bottom of the smoker to catch any hot embers, just like you would if you were using it as a smoker. If you do not have the drip pan, use a piece of aluminum foil with the edges folded upward to catch the hot ashes. You can also place a small amount of water in the bottom of the foil or drip pan to instantly extinguish any flames that may occur.

        Place one of the cooking racks in the second section of the smoker/grill as if you were smoking food. This will be where you will be setting the pan that holds the charcoal so it will be closer to the rack where the food will be cooking.

        Place charcoal into the charcoal pan. Use approximately 15 briquettes for each pound of food you will be grilling. Set the pan holding the charcoal onto the first rack.

        Pour charcoal lighter fluid over the coals and allow it to sit for approximately two minutes. Leave the smoker lid off the unit and open the front door before lighting. Light the charcoal and allow the coals to fully heat up before cooking. The coals should begin to turn white in color when they are ready, which will take approximately 20 minutes.

        Place the second grilling rack in place on the top section of the smoker/grill. Place your food on the rack and grill your food items as you normally would on a regular grill.

        Cover the smoker/grill with the lid if flames begin to develop while you are grilling. This will extinguish any flames by snuffing out the oxygen.

    Tips & Warnings

    • If you desire a smoky flavor to your grilled food, add some wet wood chips to the charcoal pan.
