Things You'll Need:
- 2 1/4 cups packaged pancake and waffle mix
- 1 1/2 cups milk
- 2 eggs
- 3 tablespoons sugar
- 1 tablespoon vegetable oil
- 1 teaspoon ground cinnamon
- 1 1/2 cups cored, peeled, and chopped apples (about 2 small apples)

Step 1
1. Preheat oven to 425 degrees. Coat a 10" X 15" rimmed baking sheet with nonstick cooking spray. You can also wipe oil on the pan if you do not have cooking spray on hand.

Step 2
In a large bowl, combine all ingredients except the apples: beat well with a whisk or mixer. Stir the apples into the batter and pour onto the baking sheet in circle shapes for pancakes.

Bake 12 to 14 minutes, or until the pancake is lightly browned on top. Make sure you do not cook them to long as they will end up dry and maybe even burnt on the bottoms.

Step 4
You can top these with butter or even apple butter and maple syrup. You can also add fresh fruit if that's what you like on your pancakes. Serves 9-12! The whole family will love them!
