This recipe for shrimp piccata is a delicious twist on the classic chicken piccata. Try it for a light, healthy, easy dinner.

Instructions

Things You'll Need:

  • shrimp
  • lemon
  • angel hair pasta
  • flour
  • chicken stock
  • white wine
  • garlic
  • parsley
  • capers
  1. Step 1

    Bring a large pot of salted water to a boil. Rinse and de-tail approximately 1 pound of shrimp.

  2. Step 2

    Finely chop 2-3 cloves of garlic and sauté in a skillet with a few tablespoons of olive oil. Add the shrimp, along with salt and pepper, and sauté just until done, about 2 minutes per side. Remove the shrimp and set aside.

  3. Step 3

    To the same pan, add 2 tablespoons of butter, 1 cup of white wine, 1 cup of chicken stock (or shrimp stock if you prefer), 2 tablespoons of flour. Bring to a boil, reduce heat, and simmer until reduced by half.

  4. Step 4

    Cook 1 pound of angel hair pasta to al dente. Drain, and add hot pasta to the sauce. Add shrimp back to the pan, a few tablespoons of capers, and 1/3 cup fresh chopped parsley. Toss together and serve.
