There are lots of people who do not want to eat fresh ampalaya or bitter melon because it is bitter. But there is a way how to eliminate the bitter taste of the ampalaya. I love ampalaya salad and here is a very simple way how to make it.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 regular size ampalaya or bitter melon.
  • a little salt
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice or lime juice
  • small size of ginger root
  • 1 small size onion
  • a pinch of sugar
  • 1 tsp olive oil
  1. Step 1

Wash the bitter melon of ampalaya thoroughly. Then slice it thinly. After slicing it, put salt in the ampalaya and squeeze it to take out the bitter taste. The best way to eliminate the bitter taste of the amplaya is to squeeze it with salt. Then set it aside.

  2. Step 2

Prepare the onions. Slice it thinly. Peel the ginger and slice thinly an inch long. Then set them aside. It is good to use the red onion if possible. You can also smash the ginger root then slice it into small pieces.

  3. Step 3

In a mixing bowl, put in the soy sauce, lemon juice and a little sugar. Mix them thoroughly. Check the taste of it add more soy sauce or lemon juice if needed and then Add the onions and ginger into it.

  4. Step 4

Add the ampalaya in the mixing bowl with soy sauce mixture. Mix thoroughly you can add more sugar if you need it. Serve with rice or bake potatoes. I really love this recipe with rice.
