I like ampalaya or bitter melon when it is cook with eggs. There are many ways on how to cook bitter melon or ampalaya. There are some that they will eat the bitter melon raw. But for me bitter melon taste good when you cook it with eggs. Here is a simple procedure on how to do it.

Instructions

Things You'll Need:

  • 2 regular pieces ampalaya
  • 1-2 eggs beaten
  • olive oil
  • a little salt
  • 1 tbsp of water
  • 1 clove of garlic
  • 1 small size onion
  1. Step 1

    Wash the bitter melon or ampalaya thoroughly. Slice it thinly and set aside. Prepare the garlic, slice it thinly so with the onions.

  2. Step 2

    Select a regular size of eggs at least 2 pieces and beat it. Be sure that the eggs are thoroughly beaten. You can put a little garlic powder on the egg to eliminate the stinky smell of the eggs.

  3. Step 3

    In a regular size skillet,saute the garlic and onion in 1-2 tbsp olive oil. Let it cook till becomes brown. Add the slice bitter melon and cook in medium heat for 3 minutes.

  4. Step 4

    Add the 1 tbsp water and cook for another 1 minute. Then add the beaten eggs and continue cooking until the eggs are cooked. Stir to avoid sticking. Add a little salt to taste.

  5. Step 5

    When it is done, take it out from the stove and serve it hot. This recipe is good to eat with rice or mash potatoes.

Tips & Warnings
  • Avoid stirring constantly because it will make your vegetable bitter.
