      There are many recipes for preparing pork roast however; I know that you will find mine absolutely delicious. You will need a 3-5 pound pork loin (bone in), 1 cup Dijon mustard, 1 cup white wine, 3 garlic cloves, 1 teaspoon salt, 1 teaspoon pepper, ½ stick butter, ½ cup olive oil.

      With sharp knife make 4 medium holes on top and in sides of pork loin. Next, take garlic cloves and cut in half, place clove in each of the holes you made in pork loin. Following the garlic cloves, take about a teaspoon of butter and stuff in each of the holes on top of garlic cloves. Pour olive oil over top of roast.

      Next, pour wine over top of pork loin, cover tightly with foil, and place into a 400-degree oven for about 2 hours. After 2 hours remove foil, brush with Dijon mustard and place back in oven for an additional 50 minutes.

      Finally, remove pork loin, let stand about 10 minutes before slicing. The aluminum foil locks in the flavor and makes the meat tender. Enjoy!!
