How to Make Roasted Raspberry Chipotle Sauce
A roasted raspberry chipotle sauce is the perfect summertime accompaniment to braised beef or pork. Available commercially at a specialty food price, roasted raspberry chipotle sauce is easy enough to make at home. Things You'll Need
- 4 cups fresh raspberries
- Colander
- Baking dish
- Knife
- 2 chipotle peppers
- 2 tbsp. honey
- ¼ cup vinegar
- 1 tsp. garlic
- Salt
- Blender
- 1 tsp. jalapeño peppers
- 1/2 cup raspberry preserves

Place the fresh raspberries in a colander and rinse gently under cold running water. This will remove any debris such as stem, soil or leaves. A stray leaf blended into the mixture could create a bad taste to the final sauce.

Put raspberries in an ungreased baking dish in an oven preheated to 375 degrees Fahrenheit until slightly browned. The raspberries should be softened and bursting. Remove from oven and let cool.

Use a sharp knife to slice open the chipotle peppers and remove the seeds. Rinse under running water to ensure all of the seeds are out.

Put the peppers, along with 2 tbsp. of honey, a ¼ cup of vinegar (red wine, cider or plain), 1 tsp. of minced fresh garlic, and a pinch of salt, into a blender and puree.

Blend until all ingredients are perfectly mixed and smooth. This could take 30 seconds to a minute, depending on the blender speed and power.

Taste the blended ingredients. If desired, add 1 tsp. of minced jalapeño peppers to increase the heat of the sauce; or add ½ cup of raspberry preserves to sweeten the sauce.

Store in an airtight jar in the refrigerator until use. Consider utilizing sterile canning techniques if you wish to freeze the sauce or keep it for more than three weeks in the refrigerator.

Tips & Warnings
Removing all seeds may reduce the intensity of the adobo sauce. So, alternatively, leave the seeds in for a more intense flavor. Or add an additional cleaned-out pepper to increase intensity of flavor without overdoing the heat. Make sure the blender lid is securely in place before pressing the power button.
Be careful as hot fruit can burn the skin. Wear gloves when handling peppers.
