Using whole-wheat pasta is a much healthy alternative then the regular pasta with enriched wheat. Whole-wheat pasta is a bit stronger flavor and can be cooked a little longer but tastes great.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 box of whole-wheat pasta
  • olive oil
  • onions
  • tomatoes
  • garlic
  • mushrooms
  • spinach
  • chicken or turkey
  • bean (optional)
  1. Step 1

Place pasta in boiling lightly salted water. While the pasta is cooking, cook onions, garlic, mushrooms and any other vegetable you have on hand until soften in olive oil. Season with Pepper and a little salt. Using kosher or sea salt is great, you don't need as much. You can also add red pepper fakes to "heat" up the dish.

  2. Step 2

Chop up your tomato and add to the onion mixture. Cook until just heated through. Add your left over chicken or turkey and cook until heated.

  3. Step 3

Once your meat is heated through, add the spinach, a couple of big handfuls since it wilts down should be fine. Toss with the pasta. Taste before serving to see if you need any more seasoning.

Tips & Warnings
  • Most vegetables will do, try adding squash, caned artichokes whatever you like.
  • If you want to skip the chicken or turkey, add in some beans for a complete, low fat protein.
  • Just enjoy!
