Step 1
Ingredients:
4 Chicken Breasts
2 tsp olive oil
2 shallots
2 cloves garlic
28 ounces of diced tomatoes
fresh basil - handful
crushed red pepper flakes (to taste)
Parmigiano-reggiano cheese
4 servings of Penne Pasta -
Step 2
Boil water and cook penne pasta. Add a dash of salt or olive oil to the water. When pasta is ready, strain and set aside.

Step 3
Heat oil in a large saucepan. Season your chicken breasts with salt & pepper. Cook on both sides until golden brown. Remove chicken from pan and set aside covered to keep warm.

Add a teaspoon or two of oil to the pan. Add shallots and garlic. Sauté until tender - approx 2-3 minutes.
Add tomatoes, basil, and oregano. Cook until thoroughly heated. Turn heat down in pan to medium and add your chicken breast with the sauce. Cook another 5-8 minutes.
Place pasta on your serving plates, top with your chicken breast and margherita sauce. Garnish with your Parmigiano-Reggiano and fresh chopped basil. Delicious!
