How to Make & Stir Corn Syrup

According to epicurious.com, corn syrup is a "thick, sweet syrup created by processing cornstarch with acids or enzymes." It's commonly used in making sweet items such as candy, jams and jellies, frosting and maple syrup. You can buy corn syrup at the store. Or, you can make your own. It only takes a few ingredients and some cooking time on the stove to come up with a batch. You can then use your homemade corn syrup in other recipes. Does this Spark an idea?

  • Cream of tartar

Instructions

      Stir together 2 cups granulated sugar, 3/4 cup water, 1/4 tsp. cream of tartar, and a dash of salt in a 2 1/2 qt. saucepan.

      Place the heavy saucepan on the stovetop. Set the heat to "medium" to cook the mixture.

      Stir the corn syrup mixture constantly until it comes to a boil. This will take several minutes. Lower the heat on the stovetop to "simmer."

      Put the lid on the heavy saucepan. Set a kitchen timer for three minutes. Cook the corn syrup mixture until the timer goes off.

      Remove the lid from the saucepan. Continue to cook and stir the mixture until it reaches the "soft ball stage." To test for doneness, fill a glass with cold water. Drip a bit of the corn syrup into the water off the spoon. When the mixture holds together enough to form a soft ball, it's done.

      Remove the corn syrup from the stove. Allow it to cool completely. Store it in a covered container at room temperature. Use your homemade corn syrup within two weeks.
