1
Butter the baking pans generously with the butter, making sure to get into the corners. Add a tablespoon of the unsweetened cocoa powder to each pan and shake and tap the pan until all the surfaces have been covered with the cocoa. Set the pans aside while you make the cake. Preheat the oven to 350 degrees (F).

2
Add the eggs, sugar and vanilla into a mixing bowl and beat at first on low to mix the three ingredients and then on high for about 3 minutes or until the mixture has become light and fluffy. Turn off the mixer.

Drop in the eggs one at a time. After each addition, turn the mixer back on, from low to high until the egg is well incorporated into the mixture. Continue to add and mix until all four eggs have been added. The mixture should be of a thick consistency, running from a spoon like a ribbon.

4
Remove the bowl from the mixer. Combine the flour and cocoa and now using the spatula, gently fold in the dry ingredients with the whipped wet ingredients. Use a up and over folding motion to keep as much of the air in the mix as possible.
-
5
Pour two thirds of the mixture into the first prepared cake pan and the remainder into the second pan. This will create one thicker cake and a thin one that will be used to cut out the ears and nose. Place in the hot oven and make for about 15 minutes for the thinner cake and 25 minutes for the thicker cake.
-
6
Remove the cakes from the oven and set aside to cool. Carefully remove them from the pans. The thicker cake can be placed on a large tray as it will serve as the face of the mouse.
-
7
Cut out two circles from the thinner cake. Each should be about 4 inches across. You can use a mug or glass or biscuit cutter--whatever you have to cut them out. Now place the edge of the cake pan about half an inch in from the edge of the small circles and cut out an indent on each of them. These circles are the mouse ears and the indent is where the ears will attach to the cake. The cake is now ready for decorating.
