Step 1
Ingredients:
4 Boneless, skinless chicken breasts
1 tsp. salt
1/4 c. all purpose flour
1 c. fat free chicken broth
chopped fresh chives
1/2 tsp grated lemon rind
1 tbsp fresh lemon juice
2 tsp honey mustard
2 large shallots, finely chopped
1/2 c. white wine (Riesling is awesome with this)
1/3 c. reduced-fat sour cream
vegetables - your choice -
Step 2
Heat oil in a large non-stick skillet over medium high heat. Season chicken with salt & pepper; add chicken to pan. Cook for approx 4-5 minutes on each side; remove from pan. Cover and keep warm.

Step 3
Reduce heat to medium. Add shallots and cook until golden brown. Sprinkle with a tbsp of flour; stir to coat. Add wine, broth and salt. Bring to boil, stirring often.

Step 4
Return chicken to pan, reduce heat to simmer, and cook until the chicken is thoroughly cooked. Approx 10 minutes. Stir in sour cream and mustard until smooth; turn the chicken to coat with sauce.Add lemon juice and garnish with the chives and lemon rind. Delicious!
