How to Grill Zucchini

One of the best ways to enjoy the last of your zucchini crop is by using them in this great recipe.

Grill zucchini marinated in a zesty Italian salad dressing and enjoy.

Instructions

Things You'll Need:

  • Zucchini (Any Variety)
  • Zesty Italian Salad Dressing
  • Gallon-Sized Zip Lock Bag
  • Grill
  1. Step 1

    Zucchini comes in all shapes and sizes, even different colors. The long green and Gold Rush zucchinis work best in this recipe, but you can use 8-ball zucchinis too if you cut them right. The more slender the zucchini is, the smaller the seeds are in the middle.

    Start by washing zucchinis and removing the stem and blossom ends.

  2. Step 2

    Slice zucchini into 1/2" slices, leaving skin on.

  3. Step 3

    Put the zucchini slices in a gallon-sized zip lock bag.

  4. Step 4

    Pour Zesty Italian Salad Dressing into the zip lock bag with zucchini slices. You should use enough to completely cover the zucchini.

  5. Step 5

    Place zucchini in the refrigerator and allow it to marinate for at least two hours, can leave longer if you desire.

  6. Step 6

    Heat grill to medium heat. Use tongs to place marinated zucchini slices on the grill. Allow to cook about 3-4 minutes on each side or until zucchini is done.

  7. Step 7

    Remove from grill and serve hot. You can serve on a small plate and use zucchini blossoms, which are edible as well, to garnish this dish.

Tips & Warnings
  • Be sure grill is up to temperature before placing zucchini on it
  • Always use proper safety measures when using grills and barbecues
