Things You'll Need:
- One 9-inch-by-13-inch sheet cake
- Plastic wrap
- 1 knife with serrated edge
- Paper and pencil
- Waxed paper
- 3 cups brown frosting (chocolate works well) -- this will be the color of the horse
- 1 cup white frosting (for the mane)
- ½ cup frosting for bridle (choose a contrasting color that's not brown or white)
- ¼ cup of black frosting
- 1 Junior Mint
- 1 Lifesaver for the bridle hardware
- 3 sandwich-size resealable plastic bags
- 1 butter knife

Step 1
After the cake has cooled, remove it from the pan and place on a cookie sheet. Cover with plastic wrap and freeze until firm, around 2 to 3 hours.

Step 2
Draw the profile of a horse's head on a piece of paper. It should be no more than 9 inches high and 13 inches wide. Cut it out and lay the template on top of the cake. Cut out the shape with a serrated edge knife. If you're confident of your artistic abilities, this can also be done free hand.

Step 3
Place the cake on the serving platter. Cut several 5-inch pieces of waxed paper and insert the edges of the paper under the edges of the cake. This will protect the serving platter from spills and drips. Frost the entire head (top and sides) with brown frosting.

Place the white and black frosting in two resealable plastic bags and cut 1/8 inch off a corner of each. Squeeze the white frosting through the hole to create an eye for the horse. Smooth the white frosting into a circle with a butter knife. Place a Junior Mint in the middle of the eye for the pupil. Use the black frosting to create eyelashes. For the nostril, create a black oval using black frosting and smooth the lines of frosting together with the end of a butter knife.

Step 5
Place the remaining frosting in a re-sealable bag and cut off ¼ inch of a corner. Holding the bag close to the cake, draw the bridle on the face. Where lines of the bridle cross, place a Lifesaver to be the hardware. The bridle should go around the muzzle and then straight up the side of the face below the eye and end up under the ear.

Step 6
For the mane, using the white frosting start at the top edge of the cake and drop a line down around 2 inches. If you hold the frosting bag a bit above the cake, the "hair" will fall more naturally. Fill in the entire back of the neck up to the ears with the mane. The mane will cover up part of the bridle.

When you're all finished decorating, carefully pull out the wax paper from around the cake.
