How to make hand made Gnocchi alla Lombarda

Gnocchi are so Italian that any Italian restaurant which does not offer them, is not really very Italian. When I was in Italy you could get them in good restaurants in all kind of variations. Gnocchi alla Lombarda is the basic recipe, and it is very easy to make them instead of buying them dried or in plastic wrap.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2-3 big Potatoes,
  • 2 tbsp flour,
  • salt and pepper,
  • grated Parmesan and Gruyere cheese,
  • butter,
  • some milk,
  • 1 egg
  1. Step 1

    Boil two or three big potatoes, and pass them through a hair sieve, beat the egg; into the potatoes mix in the flour, and the beaten egg; add enough milk so you will get a rather firm paste so you can form the gnocchi. Stir until it is smooth

  2. Step 2

    Roll it into the shape of a German sausage, cut it into rounds about three quarters of an inch thick, and put it into the larder to dry for about half an hour.

  3. Step 3

    Bring salted water to a boil. Drop the gnocchi one by one into the boiling water and let them boil for ten minutes.
    Take them out with a slice, and put them in a well-buttered fireproof dish, add butter between each layer, and strew plenty of grated Parmesan and Cheddar over them.
    Let it in the oven for ten minutes, brown the top with a salamander, and serve the dish very hot.
