A step by step guide on how to make peanut butter and jelly cupcakes.

Instructions

Things You'll Need:

  • 1 Betty Crocker super moist white cake mix
  • 1 1/4 cups of water
  • 1/3 cups of vegetable oil
  • 3 eggs
  • 1 can of cherry pie filling
  • 1 (8oz) container of cream cheese
  • 2 cups of icing sugar
  • 1/2 cup of peanut butter
  • 1 large bowl (for mixing the cake)
  • 1 small box (for mixing the icing)
  • 1 measuring cup
  • 1 small knife
  • 1 or 2 spoons
  • 1 butter knife (for icing the cupcakes)
  • 24 cupcake liners
  • 2 cupcake tins (or reuse one)
  • egg beaters
  1. Step 1

    In a large bowl beat together the Betty Crocker super moist white cake mix, 1 1/4 cups of water, 1/3 cup of vegetable oil, and 3 eggs.

  2. Step 2

    Now that the cake is mixed, take out your cupcake tin(s) and put a cupcake liner in each section. Then fill each liner about 3/4 full with the cake mix. Put these into the oven at 350 degrees for 12-20 minutes.

  3. Step 3

    While the cupcakes are cooking the icing can be made. Take out a small bowl and mix the 8oz container of cream cheese, 2 cups of icing sugar and 1/2 cup of peanut butter, or enough to suit your taste.

  4. Step 4

    When the cupcakes are done, and have cooled a bit, take a knife and cut a a hole from the top, about the width of a quarter. Pull this portion of the cupcake out and fill the hole with cherry pie filling.

  5. Step 5

    Now that the cupcake is filled with the cherry pie filling, take the portion of the cupcake that you cut out earlier, remove the bottom and put the top back onto the cupcake. (like a lid).

  6. Step 6

    Finally you can take the icing you made earlier and ice the top of the cupcake. Garnish with icing sugar and brown sugar, or anyway you like!

  7. Step 7

    Now you can enjoy eating your cupcakes!

Tips & Warnings
  • White Cake mix works the best for these cupcakes because it resembles sandwich bread, but chocolate could also be used if desired. Be sure to not use Angel Food cake mix because it is not strong enough to hold the pie filling properly and will make sloppy cupcakes! If you do choose to use a different cake mix read the instructions carefully, it may use different ingredients then the white cake mix that is being used in this recipe.
