How to Make WASA Style Crackers

I have been longing to find a recipe that would get me close to the store-bought WASA crackers and I found one that I love.
It is quite easy, it doesn't require any special baking skills and it's easy enough for beginner bakers to try.
You get a healthy and filling bread. I always make a double batch and freeze some.
You can play with the flours and add all kinds of seeds to your like.

Difficulty: Moderately Easy
Instructions
  1. Step 1

    First get your ingredients together.
    You'll need:
    500 grams flour - I recommend whole wheat, rye, spelt. You can combine them to get great flavour
    300 ml water
    300 grams oat or wheat bran or a combination of both
    2 1/4 tsp yeast
    flax, poppy or sunflower seeds, sesame, oat flakes
    3 Tbsp oil - it will prevent the bread from going stale too soon
    1/2 Tbsp salt

  2. Step 2

    Mix the yeast with 1 Tbsp flour, 1 Tbsp water and the salt. Let it sit for 5 min until creamy and bubbly.

  3. Step 3

    Mix together the flour and the seeds, then add the yeast mixture, the remaining water and the oil.

  4. Step 4

    Knead for a few minutes, until the dough comes together. If you feel it is too sticky, add 2-3 more tablespoons of flour.

  5. Step 5

    Let it rest for not more than 30 min.

  6. Step 6

    Preheat oven to 400F.

  7. Step 7

    Roll out the dough as thin as you want. If you roll it out thicker, you will get a fluffier bread.
    Use flour so it does not stick.
    Shape your crackers the way you want. I usually cut mine round.
    Prick the dough with a fork.

  8. Step 8

    Bake for about 20 min, but check in the mean time. It all depends on the oven.

    Let cool on a wire rack!

  10. Step 10
