How Do I Barbecue Grill a London Broil?
London Broil is sometimes referred to as a steak, but it is actually a top round roast. As a roast, London Broil tends to be tougher in texture when cooked quickly on the grill. Preparing the meat properly for the grill, along with cooking it slowly, will help reduce the level of toughness of the meat. Marinate your London Broil before grilling. Place the London Broil in a plastic zip-lock bag. Include enough marinade to cover the steak. Either use a bottled marinade or prepare your own. One simple marinade includes soy sauce and lemon or lime juice.

Place the London Broil and marinade in the refrigerator for at least three to four hours. If possible, allow the steak to marinate overnight.

Prepare your grill for indirect cooking. If you are using a charcoal grill, place a pile of 10 to 15 coals on each side of the grill, and place the London Broil in the center of the grill. If you are using a gas grill, turn on one burner and place the meat on the opposite side of the grill.

Grill the London Broil indirectly until it reaches an internal temperature of at least 140 degrees for a medium doneness. If you desire medium well, the temperature should be 150 degrees, and 160 degrees for well done. If you prefer your London Broil more on the rare side, an internal temperature of 120 degrees is rare, while 130 is medium-rare. Use a digital meat thermometer to test the internal temperature.

Remove the steak from the grill, and allow it to sit for 10 minutes. This allows the juices inside the steak to settle, and limit the amount you lose when you slice it.

Slice the London Broil perpendicular to the grain of the meat. This is very important, because if you slice it parallel to the grain the long fibers will make the London Broil very chewy and "tough."

Tips & Warnings
Expect the London Broil to take 20 minutes per pound to cook on the grill for a medium doneness, do not take its temperature until that time. The less often that you check the meat with the thermometer, the less of it's juices will leak out while grilling.
If you use a barbecue sauce to marinate your London Broil, remove excess marinade from the surface of the meat before grilling. The high sugar content of the sauce will tend to burn on the grill and char your London Broil.
