How to Make Favorite Old Fashioned Fudge in the Microwave

This is Old Fashioned Fudge like my Nanny used to make. She made this Rich chocolate fudge on the stove top long before the microwave was invented! I have adapted the instructions to make this recipe using the microwave oven instead of the stove top. Try it... I think you will love it.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 Cups Sugar
  • 5 TBSP Hershey Unsweetened cocoa powder
  • 1/4 tsp salt
  • 1 Cup Milk
  • 1TBSP Karo Corn Syrup
  • 3 TBSP Butter or Margarine
  • 1 tsp vanilla
  • OPTIONAL...
  • 1 Cup Peanut Butter
  • 1/2 Cup Chopped Nuts
  1. Step 1
     

    Lightly grease a 9x5 or 10x6 inch loaf dish and set aside. In a Large Microwave Safe Bowl, Combine 2cups of Sugar with 5 TBSP Hershey Cocoa Powder and 1/4 tsp salt. Stir well with wire whisk. Stir in 1 cup milk and 1 TBSP Karo Corn Syrup. ADD 3 TBSP Butter.

  2. Step 2

    Cover with Saran Wrap and Set microwave on High for 5 minutes. Mix well. Microwave uncovered on High for 10-14 minutes. If the fudge mixture "rises" too high in the bowl, open the microwave and stir for 30 seconds. Watch carefully so it won't boil over. Do the Soft ball stage by dropping a spoonful of fudge mixture into a small cup of ice cold water. swirl with a spoon, if soft ball forms, stop the microwave.

  3. Step 3

    Cool without stirring to lukewarm. I cheat here ...I put cold water in the sink and set the bowl there for about 10-15 minutes. Add the vanilla, nuts, and peanut butter. Beat by hand until thick and creamy. The fudge will lose its gloss, and hold its shape. Quickly pour into prepared loaf dish.

    Refrigerate for about 30 minutes, then score with a butter knife or paring knife. Enjoy your Homemade Old Fashioned Fudge made in the microwave!

Tips & Warnings
  • Be Careful when putting a cold utensil into hot liquid from the microwave. It can cause a volcano effect and splatter out at you.
  • An 8x8 inch square pan will work fine, also
