Looking for a delicious and simple meal the whole family will enjoy? Try these incredible sandwiches!

Difficulty: Easy
Instructions

Things You'll Need:

  • Fresh Tomatoes
  • Cheese: Cheddar & Mozzarella
  • Dried Italian Spices (garlic salt, basil, oregano, parsley, chili powder)
  • Bread or flat rolls (whole wheat or grain is best)
  1. Step 1

Line a cookie sheet with aluminum foil or parchment paper.

  2. Step 2

    Pre-heat oven to 375 degrees F.

  3. Step 3

Spread slices of bread in a single layer on the tray. Toast in the oven until slightly browned.

  4. Step 4

While the bread is toasting, shred enough cheddar cheese to cover each piece of bread with a thin layer of cheese.

  5. Step 5

Put the toast back in the oven to melt the cheddar.

  6. Step 6

Slice the tomatoes and shred the mozzarella.

  7. Step 7

Remove the toasted cheesy bread from the oven. Spread tomato slices to cover the melted cheese.

  8. Step 8

Sprinkle the Italian seasonings over the tomato.

  9. Step 9

Cover tomato and spices layer with a sprinkling of mozzarella cheese.

  10. Step 10

Bake in the oven to your liking. You can leave them in for just a few minutes for a gently melted top cheese layer, or you can leave them in for a bit longer if you prefer browned cheese with deliciously crispy edges (how we like them).

  11. Step 11

Enjoy! (I challenge you to eat only one!!)

Tips & Warnings
  • Fresh herbs would make a delicious substitution for dried - just add a bit more to get enough flavor (dried herbs are more potent).
  • Other tasty additions: pepperoni, spicy sausage (pre-cooked), diced chicken (pre-cooked), thinly sliced onion, chopped bacon (pre-cooked), olives, peppers...just get creative :-)
  • This is a great hands-on meal that kids can help to make. Give them lots of veggie choices to add to their sandwich to sneak in those healthy foods in a fun way.
  • Always supervise young children in the kitchen. Cutting with sharp knives, shredding cheese, and using an oven can be dangerous for little fingers. Please be careful!
