How to Make Multiple Loaves of Zucchini Bread With Minimal Effort

When ever I make zucchini bread I make multiple loaves. I like to make different kinds and we eat it both for breakfast and for dessert.

I usually make 4 to 5 loaves at once. The following recipe makes between 4 and 5 loaves depending on what you add to them to make them unique. If you are just making plain zucchini bread with out additions it will make 4 loaves.

Instructions

Things You'll Need:

  • A very large bowl
  • loaf pans
  • non stick spray
  • 6 cups of flour
  • 4 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 3 teaspoons nutmeg
  • 1 teaspoon baking powder
  • 4 cups sugar
  • 4 cups shredded zucchini
  • 4 eggs
  • 1 cup oil
  • 1 teaspoon shredded lemon peal
  • Optional: raisins, chopped nuts, chocolate chips, peanut butter chips, mint chocolate chips, butterscotch chips, maraschino cherries
  1. Step 1

    Preheat your oven to 350 degrees.

    Spray your loaf pans with the non stick cooking spray.
    Get your big bowl , your hand mixer out and your grater out.

    I got my big bowl at a party store it is big and plastic and cheap. I paid $2.99 for it. It is bigger than your normal mixing bowl it is more the size of a big salad serving bowl.

  2. Step 2

    Pull out all of your ingredients as well as your measuring cups, and measuring spoons.

    Grate (shred)your zucchini in to a large mixing bowl and set aside.

    Add all of your dry ingredients and gently stir. Then add your wet ingredients. Get your hand mixer and start blending, start adding in your zucchini about a cup at a time. Blend until the batter resembles a thick cake batter.

    Add batter to first loaf pan. Fill the loaf pan about 1/2 the way up. Now add your addition such as chocolate chips or nuts or chocolate chips and nuts, one of my favorites is chocolate chips and peanut butter chips. You will add 1/2 cup of what ever addition you are adding. Pour on top of the batter in the loaf pan, then take a spoon and gently turn the chocolate chips or what ever you are using blending them in to the loaf. Doing it this way will allow you to make different kinds of zucchini bread.

    Repeat the process in your next loaf pan.

    Note: If you are making all the same kind of zucchini bread with all the same additions you can go ahead and mix them in to the big bowl of batter, don't use the hand mixer to blend them in though, use a spoon and stir them in by hand.

  6. Step 6

    After filling all of your loaf pans bake in your 350 degree oven for 55 to 60 minutes.
    Zucchini bread is done when the top is firm and it makes a thunking sound when flicked with your finger nail.

    Remove zucchini bread from the oven and allow it to cool. Then turn the pan over and allow the Zucchini bread to come out. It is tempting to eat it before it cools, but it needs that cooling time to finish setting so if you try to pull it out to early it will likely break.

Tips & Warnings
  • Make sure to allow it to cool before removing from pan. I know it is tempting to eat it out of the oven but don't do it.
  • Be generous with the cooking spray.
  • Don't use the hand mixer after adding chips you could burn out your hand mixer or break chips.
