Cabbage is an excellent source of vitamin C and also has significant amounts of glutamine and amino acids which has anti-inflammatory properties. Sesame oil is a good source of vitamin E which is an anti-oxidant that may help to reduce cholesterol levels naturally.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3/4 cup purple cabbage, thinly sliced
  • ¾ cup Napa cabbage, thinly sliced
  • 1 cup seeded cucumber, sliced into half moons
  • 1 medium carrot match sticked
  • 1/4 cup each red and yellow pepper, diced Salad Dressing
  • 1-2 T orange juice concentrate
  • 4 T apple cider vinegar
  • 1 T soy sauce
  • 2 T sesame oil
  • 1 clove minced garlic
  • 3 T sugar
  • ½ teaspoon chili garlic sauce (more for spicier salad)
  • Salt to taste
  1. Step 1

    Slice the red and Napa cabbage thinly with knife or with a food processor and add to a bowl.

  2. Step 2

    Cut in half lengthwise and remove the seeds from a small to medium cucumber (you can peel the cucumber or leave the skin on for color and texture). Then slice into half-moon shaped pieces.

  3. Step 3

    Peel and cut one medium carrot into match-sticks.
    Clean and dice ¼ cup of red and yellow peppers (sweet).

  4. Step 4

    For the dressing mix the orange juice concentrate, apple cider vinegar, soy sauce, sesame oil, clove minced garlic, sugar, and chili garlic sauce and whisk together until well blended. May add ¼ cup water to the salad dressing if the salad is to be eaten immediately, otherwise you do not need to add the water since the cabbage and the cucumbers will add water to the dressing as it sits.

  5. Step 5

    Mix the vegetables,add the orange sesame dressing, and serve.

Tips & Warnings
  • The salad will store for about 3 days in the refrigerator, and
  • is actually better when allowed to sit and marinate in the salad dressing.
