How to Cook Arborio Risotto in 30 Minutes

Risotto is not difficult to make. In fact, it is easy and delicious. Here is a basic risotto recipe that you can make any weeknight. Once you master the basics, you can experiment with new risotto flavors. You can try adding mushrooms, herbs, and even pumpkin.

Risotto is also fairly inexpensive and can be added to your collection of budget recipes.

Instructions

Things You'll Need:

  • Arborio Rice
  • Butter
  • Onion
  • Olive Oil
  • Chicken Stock
  • Parmesan Cheese
  • White Wine (optional)
  • Asparagus (optional)
  • Fresh Green Beans (optional)
  1. Step 1

    Steam or blanch any vegetables you will add to the rice.

  2. Step 2

    Heat two tablespoons of olive oil in a medium-sized pan over medium heat.

  3. Step 3

    Chop half of an onion into very small pieces.

  4. Step 4

    Add the onion to the pan and cook the onion until it is transparent. Gently stir the onion around with a wooden spoon.

  5. Step 5

    Heat the chicken stock and wine (if using). You will need four cups of chicken stock and one cup of white wine. If you are not using wine, use five cups of chicken stock.

  6. Step 6

    Add the arborio rice to the pan. You will need 1 and 1/2 cups.

  7. Step 7

    Stir the rice over medium heat until the grains cook slightly, turning clear. This should take about three minutes.

  8. Step 8

    Add the hot liquid to the rice, about a half a cup at a time, stirring frequently. The rice will absorb the liquid so keep adding the stock as it is absorbed.

  9. Step 9

    Once the rice has absorbed all the liquid and is tender (about 25 minutes), remove from heat.

    If you are using vegetables in this recipe, add them now.

  10. Step 10

    Add one cup of Parmesan cheese and one tablespoon butter.

  11. Step 11

    Stir, serve, and enjoy.

Tips & Warnings
  • You do not need to stir the rice constantly but keep a close eye on it so it does not stick to the bottom of the pan.
  • Use arborio risotto rice. Regular rice will not become as creamy and delicious.
