How to Make Yummy Vegan Potato Salad

Things You'll Need
- Red Bliss Potatoes
- celery
- red onion
- white vinegar
- raw sugar (I use the brand, 'Sugar in the Raw')
- Veganaise
- fresh parsley
- sea salt
- black pepper
Instructions

Rinse and scrub potatoes. Place whole potatoes in a large pot of boiling water.

While the potatoes are boiling, chop the celery and onions, set aside. Chop parsley, set aside.

Mix white vinegar, raw sugar, and Veganaise in a bowl until raw sugar dissolves.

Check to see if your potatoes are thoroughly cooked. Slice into a potato to make sure they are tender. If they are still hard, put them back in the pot. When they are fully cooked, drain potatoes and chop into bite sized cubes. Place cubed potatoes in a large serving bowl.

Stir in Veganaise/vinegar/sugar mixture from step #3 with potatoes. Add parsley. Salt and Pepper to taste.

Tips & Warnings
I never measure. Just use common sense- guess, taste and adjust according to taste. For example, if you like it sweeter, use a little more sugar. If you like it saucier, add more veganaise. To thin the sauce, add vinegar. Needs more salt? Add some! Yummy Potato Salad may take some experimentation the first time for a perfect balance.
Veganaise is a mayo made with no products. Veganaise can be found at Whole Foods, or any natural foods store.
