Who doesn't love the Reuben Sandwich? The Turkey Reuben Sandwich is a refreshing, low calorie remake of the traditional Corn Beef Reuben seen on Delicatessen menus. One Turkey Reuben Sandwich is approximately 228 calories.

Instructions

Things You'll Need:

  • 1-1/2 cups finely shredded cabbage
  • 1-1/2 tablespoons non-fat Thousand Island Dressing
  • 1 Tablespoon Mayonnaise
  • 2 Teaspoons of Dijon Mustard
  • 12 one-ounce slices of Rye bread or Pumpernickel bread
  • Five Ounces of (thinly sliced) Oven Roasted Turkey Breast
  • 6 3/4 ounces slices of Swiss Cheese
  • Butter Flavored Vegetable Cooking Spray
  1. Step 1
    Use Rye or Pumpernickel Bread
    Use Rye or Pumpernickel Bread

    In a medium-size bowl, combine 1-1/2 cups finely shredded cabbage, 1-1/2 tablespoons non-fat Thousand Island dressing and 1 tablespoon mayonnaise; Toss well and set aside.
    On a clean working surface, lay out the six toasted pieces of Rye or Pumpernickel bread. Spread the Dijon Mustard evenly over the six slices of bread. Top each slice with Oven-Roasted Turkey breast. Distribute Turkey as evenly as possible.

    After distributing Oven-Roasted Turkey breast on each slice, top each with one slice of Swiss cheese and 1/4 cup of the cabbage mixture; Top each with remaining rye or pumpernickel bread slices.

    Lightly spray both sides of each sandwich with Butter Flavored Vegetable cooking spray; place sandwiches in hot skillet coated with the cooking spray. Cook two minutes on each side or until bread is lightly browned and cheese melts. Serve immediately. Makes six servings.

Tips & Warnings
  • A sliced Deli Pickle on the side of each sandwich adds a nice touch.
