Easy mozzarella prawns in crème fraîche recipe to make for the holidays. Contains alcohol.

Instructions
  1. Step 1

    Gather the tools you need and the following:

    (Ingredients)
    * 3 pounds large prawns, shells peeled, deveined and heads off
    * 3 ounces butter or margarine
    * 1-1/2 teaspoons freshly ground black pepper
    * 4-1/3 tablespoons brandy
    * 1-1/2 cups fresh white button mushrooms, sliced
    * 1 teaspoon cake flour
    * 1-1/4 cup crème fraîche
    * 2 teaspoons light soy sauce
    * 1 teaspoon paprika chili powder
    * 1/2 cup grated mozzarella cheese

  2. Step 2

    Sear the prawns with half of the butter (or margarine) in a frying pan over high heat, 90 seconds or until cooked. Turn off heat, season and toss the prawns with 1 teaspoon fresh ground black pepper. Stir in the brandy and then place prawns in an ungreased baking dish.

  3. Step 3

    Using the same frying pan, put in the remaining butter (or margarine) and sauté the mushrooms until half done. Add in the flour, blend well. Gradually mix in the crème fraîche. Bring contents to a boil.

  4. Step 4

    Remove flour-butter mixture from heat and season with soy sauce, 1/2 teaspoon black pepper, and paprika. Pour sauce over prawns and sprinkle grated mozzarella cheese on top. Place in oven and broil until sauce is golden. Great with pasta and bread.
