How to Make Vegetable Fries

So vegetable fries is a silly name for these as they are not fried. But they are baked to be crispy and my son loves them. They are great for kids, appetizers or to sit along side a burger. Vegetable fries are a great replacement for french fries. They go wonderful with a little ranch for a dipping sauce or you can be creative and make your own dipping sauce.

Instructions

Things You'll Need:

  • 1 zucchini
  • 1 yellow squash
  • 10 green beans
  • 1 cup flour
  • 2 cups bread crumbs
  • 2 eggs
  1. Step 1

    Wash the vegetable. Pat them dry or let them air dry.

  2. Step 2

    Cut the zucchini and yellow squash into thin strips and cut the ends off the green beans.

  3. Step 3

    Put the flour and bread crumbs in separate plates. Crack the eggs into a bowl, add a tablespoon of water and beat them.

  4. Step 4

    Bread the vegetables by first coating them in flour, then egg wash, and finish them in bread crumbs.

  5. Step 5

    Lay them flat on a sheet pan and b drizzle the vegetable fries with canola oil. Place the vegetable fries in a oven that has bean preheated to 450 degrees.

  6. Step 6

    Bake them for 6 minutes and flip the vegetable fries. Bake another 5 minutes or until they are golden brown.

  7. Step 7

    You can make a bunch of vegetable fries ahead of time and freeze them for up to one month. Just place them in the freezer so they are not touching until they are frozen. Then they can be placed in a zip lock bag.
