Its time to get those dill pickles made before the local vegetable stands shut down for the season. Here's an easy recipe for Sunshine Pickles.

Things You'll Need:

  • Pickles
  • Canning Jars
  • Dill
  • Garlic
  • 1qt White Vinegar
  • 3qt Water
  • 1/2 C. Pickling Salt
  • 1tsp Alum
  1. Step 1

    I like to visit the local vegetable stand and buy my dill pickles, they offer a variety of sizes and usually have great prices for bulk. I Use half gallon jars and small pickles, but you can make them to your preferences. While you are at the vegetable stand don't forget your dill, garlic or any hot pepper you may want to add. I like to add a slice of Cayenne pepper for a little bite.

  2. Step 2

    Clean your jars well, no boiling required unless you want to do the lids. I usually don't bother but its probably better to do so. Your call on that one. In a large pan, combine 3qt water and 1qt white vinegar(brown vinegar will make pickles very sour!! been there)and 1/2 cup of pickling salt. Stir until cloudy water clears. bring to boil and remove from heat to let cool.

  3. Step 3

    While your brine is cooling, and oh yea don't put outside to cool, seems gnats like vinegar!! been there also. Put some dill in the bottom of each jar then add your pickles the best way to pack is vertically, fill each jar 1/2 way then add 2 cloves of garlic, more or less to your taste. Add some more dill, then fill the rest of jar with pickles sprinkle 1 tsp of alum into each jar.

  4. Step 4

    Add, your hot pepper (optional) I like to add Cayenne slices for a little bite. When brine is cool to touch add evenly throughout the jars, this mixture makes enough to fill 2 gallons. If needed top off each jar with some water. tighten lids thoroughly and place outside in a sunny location leave there for 5 days. Refrigerate overnight and enjoy.

Tips & Warnings
  • add hot pepper for bite
  • use smaller pickles for better taste
  • use white vinegar
  • don't cool brine outdoors
  • don't use brown vinegar
