How to Make a Healthy Low Fat Pumpkin Cake

Soon it will be Thanksgiving and for those that want that something sweet but don't want all the calories that go with a great big hunk of pie. This recipe is for you. You can have your cake and eat it too. This pumpkin cake is easy, low calorie and taste just like pumpkin pie but without all of the fat and calories. Add a dollop of fat free or low fat whipped cream for a little extra decadence. You won't feel like you are being deprived of a single thing.

Instructions

Things You'll Need:

  • 1 Lg can spiced pumpkin
  • 1 box Spice Cake Mix
  • Non-stick cooking spray
  • 1 large mixing bowl
  • 1 9X13 cake pan
  • Low fat/Fat Free Whipped Cream
  1. Step 1

    Preheat oven to 350 degrees

  2. Step 2

    In large mixing bowl, mix large can spiced pumpkin with 1 box spice cake mix - mix until no large lumps remain

  3. Step 3

    Spray 9 X 13 cake pan with non-stick cooking spray

  4. Step 4

    Pour batter from mixing bowl into cake pan, spread evenly

  5. Step 5

    Bake for 30-35 minutes or until knife inserted in middle comes out clean.

Tips & Warnings
  • Cake can be served warm or cold with a dollop of low fat or fat free whipped cream.
  • Cover left over cake with saran wrap or foil and keep in refrigerator
  • This cake taste great even on the second and third day if stored properly.
