Talk about delicious! These are a great twist on an old time favorite. These can be served as a main entree, appetizer or finger food. I know you will love them.

Difficulty: Moderately Easy
Instructions
  1. Step 1

    Ingredients:

    2 eggs
    1/2 c. Sweet red peppers
    1/3 c. chopped parsley
    1 tbsp chopped green onion
    1 1/2 tsp Old Bay Seasoning
    1 tsp Worcestershire sauce
    1/4 tsp dry mustard
    dash of cayenne pepper
    1/4 c. yellow corn meal
    salt & pepper
    1 large sweet potato (baked or microwaved & mashed with 2 tbsp butter)
    1 pd Jumbo lump crab meat

  2. Step 2

    Whisk eggs in a large bowl. Add mashed sweet potato with butter. Add crab meat and fold together. Shape the mixture into small patties. Place your cornmeal on a plate. Coat all sides of your crab meat patties with the cornmeal.

  3. Step 3

    Heat some oil in a large pan. Add a tbsp of butter. Heat. Sauté patties in oil and butter until golden brown. Takes approx 5-7 minutes on each side.
    Garnish with parsley. Delicious!

Tips & Warnings
  • serve with chardonnay
  • make home made tartar sauce to accompany
  • corn & black bean salad is good with this meal
  • lemon
