Italian Sausage, Pepper and Onion Heros

What a fun meal to eat - sloppy and delicious!! If you make this with smaller rolls and sausage halves you can make this a bit neater to eat for any week night dinner.

Difficulty: Easy
Instructions
  1. Step 1

    Ingredients:

    olive oil
    2 lg onions (halved & sliced cross wide)
    4 bell peppers (green, red, orange, yellow) cut into thin strips
    3 cloves of garlic - minced
    1 pd hot Italian sausage
    1 pd sweet Italian sausage
    1 loaf of Italian bread
    salt & pepper

  2. Step 2

    Heat oil in a large skillet pan on medium to high heat. Place onion, bell peppers, garlic, salt & pepper, until onion are soft - approx 15 minutes.

  3. Step 3

    While the peppers are cooking, preheat the broiler and broil the sausages on a rack. (Make sure you puncture the sausage before broiling.)
    Cook for approx 6 minutes on each side - until golden brown.

    Place your sausages on a cutting board. Let stand to cool for about 5 minutes. Cut in half lengthwise.

    Toast your bread. Place your onions and peppers down first. Top with your sausage. Then top again with onions and peppers. Season & serve.
    YUMM!

Tips & Warnings
  • Serve with Cabernet
  • serve with chips & fresh veggies
  • You can also add shredded cheese to the top of your sandwich
